@Darrencab Wild guess here, without more details. If your clock changes and becomes simplified and monochrome, then your Always On Display is on. Swipe down on your screen. Make sure the bottom left icon (looks like an analog watch face) is off. The touch screen is very sensitive and it is easy to make changes without realizing it.
If I guessed wrong, please share more details.

Hi @Darrencab - it can also depend on the clock face you have chosen, some of which can change if touched inadvertently or are designed to on their own but it is more likely an AOD issue.
