Is there a way to completely remove Google assistant from the Fitbit Sense. I don't have it set up. I don't want it at all. Every time I so much as  sneeze I get a screen on my Sense saying "do I want to set up Google assistant?" No I don't! Not ever! It's driving me nuts.

HI @Eskimodisqo - there is a simpler solution, go to the watch Settings, Shortcuts and turn off Press and hold or assign it to something else. This can happen more frequently if you are left handed.
