In reading docs on firmware update, I see something to the effect that IF I see a pink arrow, then there is an update available. However, the lack of a pink arrow means ... that I have current firmware? How can the lack of something I have never seen, be a signal of something? Am I missing something?

The usual case is that you have the latest update.
When there is a new update available for you, you get that very noticeable pink arrow with the explanation of a new update. After you do the update, the arrow goes away.
So the default situation is that you have latest firmware and no notice to update it.

I was told by fitbit help that I need to force sync my Sense over and over again in order to get the 'full' update. That new updates are so large that you only get pieces of it every time you sync your Sense. So in order for an issue I was having to go away (it still hasn't gone away), they told me to just keep pressing sync because even though there was not a pink arrow showing up, they said I still didn't have the full update. I tried to ask them - how many times do I need to press sync in order to get the full update?

Fitbit does a progressive rollout so only small percentages of users are able to update at any given time. Once the update rolls out to you, you'll see the arrow. Until then, you have the latest update available to you.
