Heart rate variability

Ok.  I’ve read what hrv is.  But I’m not understanding it’s significance and how it is affected by fitness, age, etc.  

 

mine is running 72 which from reading seems like that would be good.  However, I’m old and out of shape so I don’t think it’s an indication of health or fitness.  Is it just fairly meaningless or am I interpreting wrong?

As a single number without any wider context, it is rather meaningless.
