I would like to know whenever the Sense give your temperature variations (i.e. -1°C or +0.3°C), does it take as reference your core temperature from your manual log or it takes the recommended range of 36.0°C to 37.2°C?

Those temperature variations are just for overnight skin temperature, not core temp. The base is set from average of I forget how many previous nights. It has no way to measure core temp. However, there is place you can log your core temp taken by your own thermometer, just to keep a record of it.
