When I search Google, I see a post about being unable to but I don't even see a way of doing this.

Hi, you can scroll left on the watch to get to the Today App. If you don't see the possibility to log water, then scroll to the bottom of Today and click Edit and add it.
There is an alternative, find a clock face in the gallery that does it natively, such as SimpleClockPro which counts glasses drunk.

got it - thanks everyone. I ended up downloading an app for it which seems to be better than using the Today app since it requires a bit of scrolling.

@SunsetRunner - the advantage of the clock face is it gives you a reminder to drink. It requires no navigation or manual entry. Keeps a log of your drinks automatically.
At the end of the day you can enter once the final amount for the day in the Fitbit app as @lablover55 says, like you would for manual temperature.
