Hello, I went for a walk today that my Sense tried to register as a run, and I didn't realise it has GPS enabled by default. I don't want my GPS data saved, so I deleted the activity. Can I have confirmation that doing this will have deleted all trace of the activity from FitBit's services and isn't saved in any replica set or backup DB instances?

Welcome to the Fitbit Community, @timblakely. Thank you for sharing your question regarding deleted GPS activities with your Fitbit Sense.
I checked and confirm that deleted activities won't appear anywhere on Fitbit database.
As @LZeeW deleted, means deleted.
I hope this information helps.

@timblakely I’m going to flag your post to get a moderator to answer.
It’s my understanding that deleted means deleted. I know that there are places in the app where the user is warned that “this step cannot be undone” once you hit that delete button.
