I'm not sure I could be any more frustrated with the Fitbit Sense Firmware version 44.128.6.12.
I have an Ionic, ordered my refund, and bought two FitBit Sense watches. One for me and one for my wife. I have a Moto Z4. She has a Samsung Galaxy S20 FE.
The Problem:
During setup with the Galaxy, the watch connects to WiFi and updates. Once set up is done, and one attempts to access the watch face gallery, the WiFi connection drops. Going back in to the WiFi settings and re-entering the PW reconnects the watch. While still in the WiFi page in the app, the watch shows an IP address for the watch. If the app is closed at this point, the IP address stays. If the app is opened, the IP address drops. If the WiFi PW is entered, the watch logs back in. Leaving the WiFi page and attempting to open the Watch Face Gallery causes the WiFi to drop and the, "Oops, looks like there's no Internet connection" message to appear.
I have just spent the last four hours trying to get her watch to stay connected to WiFi on her phone.
So far I have:
When I unpaired my watch and paired my wife's watch to the Moto Z4, it worked fine and I could access the Gallery and perform all the usual functions.
There's some weird setting somewhere that causes the app to disconnect the watch from WiFi.
The Fitbit App sucks when paring with Samsung phones. Samsung phones are the most popular of ALL %$#@#$ CELL PHONES! Why is this even a problem!
Customers shouldn't have to figure out their phone is not compatible AFTER buying the watch.
Please fix this.

Hi @Butsudoka - wifi is not used to install clock faces, most communication with the Sense is via Bluetooth after the initial setup. .
See No internet connection it might help fix the phone setup if that is the cause, or it could be an incorrect error message.

I assumed that WiFi was the issue because clicking on the Gallery in the Fitbit app returned the, "Oops! It looks like there's no Internet connection" message, and assumed the app was referring to WiFi on the watch because the phone was still connected to WiFi.

I had the same problem (I also have a Samsung phone but this turns out not to be an issue). I read the item about the no Internet mess and it mentions that an ad blocker can cause it. I have an ad blocking dns server on my network (PiHole) and when I stopped my phone from using that, the error m didn't come up and I could choose faces and apps. Now I'll turn the blocker on again and I'm happy
