My units are on miles and farenheit in the app but the watch still says the "miles" are kilometers and the temperature reads Celsius. Is this a common glitch?

No, it's not. My guess is either "automatic timezone" and/or "automatic place" is switched on? If not, I would try to set miles to kilometer, and fahrenhet to celsius, sync the watch, and then reenter miles / fahrenheit, and sync again.

Hi @carpims8690 - temperature is modified in several places - see How to change Temperature - for Weather, Centigrade - Fahrenheit, Sense
It may not be syncing well and a logout of the app and restart of the phone and watch might help.
