Why does the watch face state “undefined” for steps/calories/heart beat/heart rate?

Try a different clock face, preferably one 'by Fitbit".  Sometimes with third-party developed faces, the developer doesn't keep up with changes required from a Fitbit change.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
