through the settings for the weather app.
Open the fitbit app - account - sense - apps - tap the weather app - settings.

I have changed this numerous times to fahrenheit and Sense still displays celcius...very frustrated. My next tracker will probably not be a fitbit

"Now I feel really dumb..."
Like many, the only dumb thing you did was to very quickly blame your tracker and threaten never to purchase another from Fitbit. 😏
Be aware that there can be third party clock faces that may only support one or the other temperature scale. I found a clockface I liked that didn't support Celsius which I use for my former Ionic. Fahrenheit meant little to me, so couldn't use it.
