From my Sense, when I access Settings > Display > all items are dimming out (as though the device is about to die on me). It only appears on those items listed within DISPLAY. Why? And what can I do about it?

Sounds like you have sleep mode activated. Go to settings, quiet mode and turn off sleep mode. The display settings should be accessible again.
