I found it very strange, Fitbit app always says “ your Fitbit is up to date “, but if you go to the Apple Store it offers you an update

I believe what you are seeing is that the Fitbit device is up to date, not the app.  If I go to gear icon in the app, then Help & Support, I see Check for Charge 5 update.  When I went into the app store yesterday, I saw a new Fitbit IOs app update for 4.02.
