The app updated and my sense wouldn't sync properly, so I tried to disconnect the Bluetooth. When I went to connect the app, my phone wasn't recognizing it. It still recognizes my watch though.

In addition to the steps you've done so far, please try the following in the order listed:
Before trying the above, please be aware that most Fitbit devices store up to 7 days of detailed minute-by-minute data. If you wait longer than 7 days before syncing, you may only see the most recent week's detailed data. Summary data (calories, distance, steps, and floors) will be stored for 30 days. Nevertheless, if your Fitbit device was unpaired from your Fitbit account during this period of time, neither the 7 days can be recovered or restored.

These steps do not work. I have followed them multiple times. I am able to get the 4 digits on the Sense display. The Fitbit app then says "connecting to Fitbit". This message never changes. Then there is an error message "Something went wrong. There was an error while trying to pair your device. Abort. When I check my bluetooth devices the Sense is paired and I can receive messages from my Iphone. However, the fitbit app is NOT paired. Please suggest another fix.

I appreciate you've taken the time to try the steps I shared above. As our last resort, I'd recommend performing a factory reset on your Sense. To do so, on your Fitbit device, open the Settings app > About > Factory Reset.
Once the above has been done, you can now proceed to set up your Sense again by following the steps provided here How do I set up my Fitbit device?
Take into consideration that a factory reset deletes any stored data, which includes all data that hasn't synced to your Fitbit account and your applications, alarms, etc.

Does anybody bother to test these updates before rolling them out and causing all these issues? Having to mess around with all these things to try to get a product back to a working state is ridiculous and a complete waste of time.

The Bluetooth sync issues started way before the new app rolled out.

Easy there, easy. I was only stating that the Bluetooth sync issues have nothing to do with the recent FitBit app update. Many people started having sync issues long before the new app rolled out.
