I have been using Fitbit watches since 2016. Started with Blaze, moved to charge 2. Went to apple ecosystem (Apple Watch and iPhone), but came back to (my) Sense(s). Here is my experience with Bluetooth on Fitbit devices.
2016 to 2020: Fitbit Blaze. Worked fine, bluetooth had its bad days but a few times refreshing and toggling BT on my pixel phone & later pixel 3 phone would work fine. Usable
2018 to 2020: Fitbit Charge 2. Lots of BT connection issues. I left it to its fate and it would sync when it desired to do so
2020 to 2024: Fitbit Sense. Felt like an upgrade from my older devices, but BT issue persisted. The App had its own inconsistencies (speaking from data point of view) since its first version and unfortunately still continues.
I searched the community forums and the best advice were for the noobs around: "can you turned it off and on again". Seriously, it is time Fitbit devs/mgmt accepted that the BT implementation of the device was never great and unfortunately they could never spend time on improving it. Till this date, this primary feature lacks so far behind the industry. (I get that BTLE optimizes for low power consumption, but not to the point where it is not usable).
Anyway, why am I still sticking with Fitbit? I see wearables as health devices (and less of communication device with all sorts of distracting notifications and message replies) and Fitbit does fine with basics and battery life.
I just hope my next upgrade to Pixel doesn't suck like this. This is a rant post to pile on, so that Google/Fitbit gets some feedback.

The current Bluetooth sync issues are definitely frustrating. In case you were not aware if you do get a Pixel Watch you have to charge it every day. I love my Pixel phone and Pixel tablet. The only thing stopping me from getting a Pixel Watch is the crappy battery life and Wear OS in general. I wore Android Wear / Wear OS watches from the very first one in 2015 (LG G) until my first Fitbit in 2021. I couldn't deal with all the bugs in Wear OS and the horrible battery life.
