Every time I want to sync I have to pair with my Bluetooth again. Why? I’ve had to do this for 3 days now and practically every hour.

Thank you for the detailed information. It could be due to a connection issue and I'd suggest that you please try to turn off the Bluetooth on your phone and then turn it back on.
In addition, I'd recommend restarting your Fitbit Sense by following the instructions in this link and then, please force quit restart the Fitbit App. If that doesn't work, please go to Set Up a Device in the Fitbit App, choose your wearable Fitbit device and then tap on Replace Device. This will attempt to repair your watch or fitness tracker with the phone. Simply follow the instructions provided. Depending on the device that you have, you may be prompted to enter a 4 digit number to approve the connection.

It seems to be working after I shut off my watch and turned it back on. It asked to pair but hasn't asked since so I think it is holding.
