I've previously been able to get notifications for calls, emails, texts, etc until the last week or so. When I try to set up on wrist calls it says "can't connect to sense controls"

You may need to go to the phone's Bluetooth and configure Sense Controls on.
It won't stay on but it should enable you to set up on wrist calls.

I've been having the same issues. I have tried everything they suggest to fix it and nothing is working. I wonder if its an update issue.

I've tried that. Doesn't fix the problem.

I discovered that there is settings on the Fitbit Sense watch itself that must have the On-Wrist Calls slide control to the On position in order for the Sense Controls to show in your Phone’s Bluetooth listings. I don’t remember exactly what I did but it started with me pressing the button (on the left edge of watch when time facing you) for several seconds and then scrolling down and finding the On-Wrist Calls slide control which was slid to the left in the off position so I slid it to the right in the on position and thereafter my phone Bluetooth page showed the Sense Controls which I was then able to pair.

All my settings were on, but the only quick fix was shut down my Sense and power back on, now getting my notifications.

Thanks.
For the Sense Controls Not Connected issue: that is the usual setting on the phone’s Bluetooth page when there’s no incoming call. But it is connected when a incoming call is coming.

My phone (S21+) can't even find the sense controls anymore. I never get notifications, it's not a phone problem it's a Fitbit problem. It has stopped syncing multiple times, I've had to delete the watch & app and re add them. This watch is only 4 months old. My sister has been through 2 Fitbits in 6 months. I will never again but a Fitbit.

I had this problem and it turned out sleep mode was on somehow. Swipe right on phone and make sure the minus (do not disturb) or sleep mode (moon) are not highlighted.
