We went on a cruise, and the ships clocks changed overnight while we were in the North Sea with no phone signal.
It was impossible to change the time on the watch, or sync the watch, without the phone signal - even though the phone talks to the watch through Bluetooth, without the internet connection it could do nothing.
We had to wait until we reached Norway before putting our clocks right.
There needs to be a time override function for situations (admittedly rare) where a phone signal does not exist.

Typically, it sets the clock from GPS signals too. For this, you have to start an exercise which requires GPS. When a fix is achieved, the clock is set.
However, I do not know what is it's behavior when changing time zones...
