Hi,
I apologize in advance if this has already been asked. Right now I'm doing cardio 5x week and weight training 3x a week, however, one of those weight training days is strictly body weight exercises and plyometrics(ex: push-ups, pull-ups, dips, planks, lunges, squat thrusts, box jumps, etc.). I don't even touch a weight that day. My question is: which exercise do I turn on for that workout? Would I still turn it on weightlifting? Or should I just do workout? Thanks for the help.

Hope you're having a wonderful day @JBird2016, welcome to the Forums! Let me start with, a Wow! You do a lot of workouts, it's really impressive. I think that you can keep using the "Workout" option for your Plyometrics workouts, since "Weights" doesn't involve a lot of movements. If you know how many calories you burned during that workouts or if you're using a convertor to know exactly the number calories burned. You can manually adjust your "Workouts" in the Fitbit App. Or you can manually log the activities with the name "Lyometrics", it'll be registered as a customized activity, for you to use it in the future.
You can manually adjust your "Workouts" in the Fitbit App tap on the tile "Track exercise" > Tap on the activity > Android (tap on the pencil) / iOS (tap on the right arrow).
To manually enter the activity Lyometrics in the Fitbit Appa ta on "Track exercise" > Tap on the stop watch and manually chose the stats.
Hope this helps, I'll be around in case you have doubts about it!
