Because unfortunately syncing your data is only a partial sync...... to do anything like syncing your time, turning all day sync or always connected on or off, changing clock faces/exercise shortcuts/alarms/quick view/firmware updates etc require a full sync which you're not getting. Using a PC with the dongle that came with your tracker usually works best for anything more than simply seeing your daily stats.
