@Caspien A warm welcome to the Community! Thanks for the troubleshooting that you've done. Since, you already tried unlink and relink both accounts I highly recommend to contact MyFitnessPal directly so they can investigate it.
When there is an issue syncing between Fitbit and MFP they post it on their website.
What kind of error are you getting in your app that doesn't let you track your exercises?.
Also, keep in mind that you shouldn't be logging step based activities if you're using your tracker because this will override the data. You should log activities that require more than steps like tennis or yoga.
