Hello @bea114, welcome aboard to the Fitbit Community. At the moment this is an integration not officially supported by Fitbit, so we do not have control of which data is going to sync with S Health. From what I know Sleep, location and GPS, weight, heart rate, profile, activity and exercise will be sync.
To learn more about how it works it would be recommendable to contact directly the support of S Health.
