My setup works: I have a Withings scale connected to Health Connect, and then my Fitbit app is connected to Health Connect. When I weigh it gets sync'd and shows up in the Fitbit app.
Your probably will work, but figuring out how to dial in the configuration is the tricky part. Good luck

Could you share your settings?
The weight and body fat from my Xiaomi scale do appear in Health Connect but Fitbit doesn't pull the values

Good question.
I go into my Fitbit app: click the "you" tab. Then under the "Records" section I see a "Health Connect data" tile. Then, in there is the "Body Measurement" area and in mine there is a "Weight" tile.
Mine shows:
Weight 189.1 lbs 1hr ago * <withings icon>
-----------------------------------------------------
If you go through all that and you see the Xiaomi icon next to your last weigh-in in your "Weight" tile, then we are talking apples to apples comparison.
Does your weight data get there cleanly with your Xiaomi scale?

After confirming that, then it is now at the Fitbit app itself, and the permission setting and priorities you have on reading/writing your Health Connect data. Check the status of your Xiaomi scale data in Health Connect and let us know if you are there.

Yes, the data from the Zepp app is synced with Health Connect. Google Fit displays it (it gets it from Health Connect), for instance.
Here it is in Health Connect:

And Fitbit is allowed to read everything:
EDIT: **ahem**, Fitbit resizes the images and you can't read it anymore. Well, trust me, it has the reading rights for all data in Health Connect 😐
