I am trying to change the excersize short cuts on my versa 4, but when I got to my device icon in the app "excersize shortcut" is not listed.

For the Versa 4, all the exercise choices are available right on the watch, and they intelligently sort themselves with your recently used ones going to top of the list. 

From the Versa 4 manual (pdf) ,
