I have my Amex card linked to Google Pay, but I get the "contact your bank" error when I try to set things up using Google Pay in the wallet. On my Versa 2 the Amex worked just fine. The unfortunate thing is I can't get rid of G Pay, in the app, and go back to just the Amex card. Once you make the choice for G Pay, your stuck, as per the Fitbit app warning.
I did contact Amex and spoke with tier 2 tech. I forwarded screen shots to them so we'll see, but I've got a feeling it's a Fitbit bug, seeing how G Pay is new.

It seems like the Google Wallet on Fitbit is as limited as previous FitbitPay. Even if you can use your card for contactless payments with your mobile phone via GooglePay/Wallet it doesn't mean it will work with Fitbit. I still can't use my HSBC card on the watch but it works perfectly fine on the mobile phone. I see here another overpromised and unfinished feature.

I know my G Pay works as I just went up and purchased gas with tap and pay.
True regarding it's always been a bit squirrelly
