I have recently bought my wife a new Charge 2 Fit bit.can I delete all her history on her old Zip and use it myself.

I'm glad to hear that you got a Charge 2 to your wife, great choice! As @Odyssey13 mentioned, after your wife removes the Zip from her account and you pair it in your new account the information on the Zip will be wiped out. You will find the Zip manual here. And in case that you need the Charge 2 manual check here.

Hi @BPfitmush

 

The history of the Zip is under your wife's email address and password, stored on the Fitbit server.

 

Have her remove the Zip from her account and be out of range while you set the Zip up with your own account.
