Welcome to the community!
You can use Cortana to do some things with the Windows 10 Fitbit App, such as log your food and log an activity. You need to have a Windows device... Either laptop, tablet, or phone.
You can either enable it to wake up to "Hey Cortana" or simply launch Cortana and hit the microphone button... Command like:
"[Hey Cortana] Fitbit I ate a big mac"
Work like a charm.

I don't know for sure, since I don't have an iOS device, but I suspect that Apple won't allow the Cortana App to respond to voice commands that way. It wants to promote their technology (Siri) and thus do not allow other third party apps (like Cortana) to talk to other third party apps (like Fitbit).
I would agree that it would be great functionality. Perhaps you can petition Apple to make those changes.
