I cannot edit my weight goal.

That’s it. That’s my problem.

I appreciate your message, and I'm sorry to hear that you can't edit your weight goal. 

Could you please confirm if you tried the steps shown in the following help article ? How do I set or change my Fitbit goals?

Additionally, the “edit goal” label is greyed out in the ‘weight’ section.

@timkbryantyeg   Other iOS users have the same issue.  They can't change any of their goals, as shown in your first screenshot.  Have you tried deleting, then reinstalling the Fitbit app?
