How can I add different challenges?
How can I add more people per challenge?
Y can I only be in five challenges with a max of 10 people ( myself counted as one of the 10 😔)

I'm afraid that's just the way fitbit decided to implement it. There's no option to get round it. You may want to add your vote to this feature request to improve the challenges options:
