New iOS update and app update and I now haven't been able to sync my watch to the app. I tried disconnecting from Bluetooth, forgetting the device, deleting the app, and restarting my phone. None of them have worked. I'm also no longer on a premium trial so that's super suspicious all my stuff stops working when that runs out.

Please make sure that you have a strong internet connection (Wifi/ mobile data)
For the best results, verify that no other bluetooth device is connected or near the phone.
