It seems that food intake log via apps in iOS and via web can capture calories, not fat, fiver and carb etc.

It would display "Daily Calorie Composition: 0% from carbs, 0% from fat and 0% from protein" whatever I logged.

does anyone know how to fix it?

I use MyFitnessPal, by UnderArmour, to log my food. It tracks fiber, fat, etc. You can sync the applications via teh MyFitnessPal settings so that the calories of what you enter are sent to FitBit and evereything else is kept in MyFitnessPal.
