I did a cardio workout today and logged it in the app. When I click into the logged exercise, it doesn’t show me any data on my heart rate. Also, if I look at my heart rate graph for the whole day, the peak is significantly lower than what my device was displaying during my workout.

Hello @Efrogers and welcome to the Community. Can you please clarify some details? You wrote that you did a workout and logged it in the app. Does this mean that you did your workout, then added it by tapping on the green "+" sign > Manually log activity > you entered the details? If so, then what model Fitbit do you use?
Fitbit started reporting simplified, minimal details and removed the heart rate graph for exercises that are manually logged (like my description) or tracked automatically using SmartTrack. There has been a lot of negative feedback, so I hope Fitbit changes their mind.
If you have a Fitbit with an Exercise app, it will show your heart rate in the exercise details.
Any point on a daily heart rate graph is an average over five minutes. The data is so smoothed that it can't show the peak heart rate you saw on your device.
I hope this helps.
