Loosing bluetooth connection / incorrect time

Hi

I really love my new watch but daily it goes into default mode and that part is beginning to be really annoying. In default mode time is set 2 hours back, language changes from Norwegian to English, iPhone 12 looses connection. This happens every day mostly during night time. I need to «forget the device» and reconfigure. 

I have noticed though it happens when watch is in use (on wrist) but never not in use (charging or not on wrist)

Current firmware version 20001.210.26. 
iOS version 18.4.

I have searched in forum to find a solution and tried everything (restarted watch, deleted app og reinstalled, logged on/off, restarted phone, forget device, set timezone to Europe/Oslo (disabled update from phone)) - still same problem reoccurs.
I tried to resolve the issue from time-to-time last 3 months but no luck so far. 

Any idea anyone?

Thanks! Im not sure issue is related to iOS though but it can be.
Last 24 hours my watch has not been in use, just laying on a table and then it works fine. Bluetooth connection is stabile and obviously time zone is not changed (bluetooth is not lost).
