I got a new Versa 2 and when I set it up my old Ionic is not linked to my Fitbit app anymore, but it is still getting text and phone notifications. How do I stop that?

Check your phone's bluetooth.  If the Ionic is still connected, unpair it.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
