I recently switched network carriers and got a new phone as well, specifically went from the 7 plus to the 8 plus. When I attempt to log in to the Fitbit app on the phone it fails to do so. Specifically, I put in my email and password and it will sit there trying to log me in until a notification appears telling me that the request timed out. I am still able to use the app and can easily log in and out of my account on my previous phone.
My internet internet connection works perfectly fine, the app is up to date, and the email/password are correct because I was able to use them to log onto my account here and on the previous phone, so I don't know what is going on that is preventing me from doing so on the new one.

It's very strange that you're not being able to log in to your account on your new iPhone, that's pretty weird; but I'll be happy to help you out with this and thanks for what you've tried to get this working!
Normally, it should let you log in on any other device simultaneously but since that is not happening and since you have no problem logging in and out on your old phone, you can try to log out of your app on that device and delete the app. Now, on your iPhone 8, I'd recommend making sure that it's updated to the latest OS available and since you're downloading the app recently, it should be the latest version available as well.
Now, just to be sure, on your iPhone 7 go to the phone settings, then go to Bluetooth and look for your Fitbit tracker in the connected devices. Hit the "Forget this device" option and once you've done this, attempt to log in on the iPhone 8 and see if that makes any difference. Rebooting the phone itself could also help.
