My red notification circle on the app icon is stuck at 3 notifications yet I have checked all of my notifications within the app. How do I get rid of them?

This seems to be a bug that Fitbit are aware of. Keep an eye on the following thread where they are posting updates:

@NightHawk65   I'n not sure why the app badge notification seems to have turned itself on.  You say you checked your notifications, but did you delete them?  I never got a Fitbit app badge notification in the past, but I got an iOS update and my badge notifications are on (for every app).  Here is how you turn them off.  Go to your iPhone Settings > Notifications > Fitbit > toggle Badges to Off.  That should take care of it.
