Welcome to the Fitbit Community @Mcgirlie, if you are still missing some tiles and you're not able to see them listed in your iOS dashboard, most likely the tiles could be hidden, make sure you follow the steps provided in this thread by @SunsetRunner to show the hidden tiles.
Regarding the e-mail address, could you please describe the exact error message you're getting or provide a screenshot? You mean you typed the wrong e-mail during the setup process or while you were trying to login?
