Tap your user icon at the top left of the Today screen.
On the Account page scroll down and tap "Help"
Your iOS release is at the top - mine says "FitBit 3.30 (990)". Don't worry about the "(990)" - that is an internal "Build" number.
Apple Watch 6 - iPhone 8 (iOS 16.7.8) - FitBit app 4.20 - MacBook Air (macOS Catalina)
