I have my child's Fitbit Ace synced to my adult account. If I wanted to delete this data and start using this device with no prior data under the same email account, would this possible?

I'm sorry but no its not possible.
You would have to open a new account with a new email address
You can delete your account and then start over. But it does take time to get it deleted
