Woke up this morning at 4:30 as always and my fitbit flex was showing I had been 60 minutes active for the day. Unless I was exercising in my sleep, that is impossible. Why would it show That?

One possibility - it hadn't synced yet for that day so was still showing yesterday's data.
Otherwise, the best way I have found to investigate issues like that is to look at the dashboard on fitbit.com and examine the daily view for steps and heart rate to see if it was recording steps and/or raised heart rate overnight, and at what time.

That sounds quite odd. There are some reasons why it could happen, though. Did you have a good rest while sleeping? Or where you having nightmares or perhaps you are under a lot of stress? Or maybe there were some bugs bothering you during the night? All of these things could lead to you moving your arm around while you sleep and the tracker would confuse it with activity.
Hope this clarifies the situation. If none of these would apply, please let me know.
