This makes zero since does anyone know why this keeps showing up when I try to add my Pixel 8P as a device? GPS is up to date. Weird!

Hello. I do not have "show detail in App Store" in my Pixel 8 Pro ... 😞

The show detail is found in the phone settings - Apps - Fitbit.
Tapping show details will open the screen you posted., from your Play store.
You are looking at the detail
You want to back out one screen, do you see an Update App?

You have said that google play service is need to be updated, no? It goes as a separate application "google play service" with it's own properties that cannot be uninstalled.
If I go to phone settings - Apps - Fitbit, then yes, in down there is a link to google play store, it is updated to last version (since I've installed it on my new phone today). Anyway my fitbit cannot add my own phone where is this fitbit is installed wit the same error message as in first message of this topic.

I have managed it!
By following this article, if you don’t see these options (update of google play service), follow the steps in Step 2 and Step 3.
Step 2: Clear cache & data from Google Play Services
Important: When you clear Google Play Services data or storage, it may delete some information saved to your device, including transit cards, COVID cards, and virtual payment cards saved to Google Pay.
On your Android phone or tablet, open the Settings app
.
Tap Apps
See all apps.
Scroll down to "Google Play Services."
Tap Google Play Services.
Tap Storage
Clear Cache.
Tap Manage Space
Clear all Data.
Step 3: Clear the cache & data of the Play Store
This gives the app a fresh start and can help fix issues.
On your Android phone or tablet, open the Settings app
Tap Apps & notifications
See all apps.
Scroll down and tap Google Play Store
Tap Storage
Clear Cache.
Tap Clear data.
Re-open the Play Store, and try your download again.

After clearing data of google play services (which I already did and it did not help) AND play store (which I didn't), it worked. Now google play services have a link on google store and seems it is updated. Fitbit has recognized my phone, all is fine.
