Since I received the update on my Pixel 5 phone last night, I have been getting a "Device Pairing - your messages are available on the device you are pairing" about every 10 minutes along with every single notification and message received on my Versa watch. I have restarted both devices and unpaired & re-paired. Anyone know of a fix for this?

This issue apparently has to do with your phone update and not your Versa Fitbit. But with that said I dug around the internet for a fix to your issue. Here’s what I found:
Open the messages app
Click the 3 dots in the top right and select "Device Pairing"
Again click the 3 dots in the top right and select "Notifications"
Click the toggle for "Show Notifications" to turn it off
Now you won't get any Device Pairing notifications, but you'll still get incoming text message notifications.

I have the same issue, but your solution is not working for me. WHERE am I supposed to open the Messages app? On my phone? I do that but I don't find any menu choice for device pairing. I have a Pixel 5 running Android 13. The device pairing messages are driving me crazy. It always used to display my messages. Now I just get this stupid message.

It’s the message app on your phone. While your in the message app tap the three dots. (See image below) Now tap Device Pairing in the drop down menu. A new menu will appear so look now to the upper right and another 3 dots will appear. Tap those 3 dots and then tap notifications in the drop down menu. Where it says "Show Notifications" to turn it off.

Unfortunately, different phone manufacturers install different "Messages" apps that work differently. On my Pixel, I have the three-dot-menu, and it does have some Notifications settings. The first one is "All Messages notifications" which seems to be that master switch. Below it I have:
All "Default settings" notifications
All "Messages for web" notifications
Spam Protection
Background tasks
Other Notifications
Data Download Notification Channel
Allow notification dot
Each of those has its own toggle switch. As long as the first "All Messages notifications" switch is on, I can change any of the other switches to turn those functions on or off. I am thinking perhaps these messages might be Background tasks or Other Notifications, but I don't see any documentation to clarify this.

Im sorry my troubleshooting steps didn’t work for you. It’s hard to navigate your message app without actually having it in my hands. Apparently your using a different one then the others who posted here as my solution helped the.
