@LizzyFitbit is there at least a way to export that data by day? I don't see it available in the export

Thanks for your efforts in trying to export your data. I'd like to share with you that currently there isn't a way to select a specific day as you can export a complete archive of your data. You can find more information in this help article.

I understand how useful it'd be to export your data by day and I encourage you to support this idea by adding your vote. That way our team can track its demand and take it into consideration for future updates.
