Welcome to the Fitbit Community, @TTrayner.
I am sorry to hear you're unable to add food or drink and receive a message that the app is down for maintenance. Thanks for trying to resolve this and I am here to help. I recommend trying the following:
1. Force stop the Fitbit app on your phone: Settings > Applications > find the app > select it > select Force stop.
2. Reboot your phone.
3. Check if your Fitbit app is updated to the latest version: How do I update the Fitbit app?
If the issue persists, you may try to uninstall and reinstall the app.
You can confirm the steps to log food at How do I log food in the Fitbit app?
Keep me posted on the outcome. I'll be around if you have any additional questions.

I sorted this by logging off then restarting my phone then logging back on. However, i now have to do this on a regular basis to get the app to work.
