You should be able to edit your sleep log by using the 3 dots in the upper right of the Sleep page and selecting Edit sleep. Enter the correct time on the page that opens and tap Save.
This worked for me when I edited my sleep start time for last night. The other thing I noticed is that it used to take a while for my sleep log to update in the app after I've edited it. Now, the log updates within a few minutes, including my score and sleep stages.
