My charge HR has stopped syncing and I'm stuck. I have restarted the fitbit and no difference. If I uninstall the app on my S7 Will I lose my step history? Not sure what to do and fitbit haven't been able to sort it for me.

It's worth trying the fitbit restart a few more times as it's known to not always work.
Fitbit's troubleshooting guide for syncing issues is at: http://help.fitbit.com/articles/en_US/Help_article/1866
Hopefully there's something in there you have yet to try.
PS the data is help on the fitbit servers so removing the app shouldn't cause any loss of data
