The website used to have manual logs for blood pressure and blood sugar, but that was not used by the majority of users so it was dropped. The apps never had this info and I doubt they will add it now since they got rid of the web logs.
I would not be surprised if more watch faces are added at some point in the future or the current ones get updated for more customization.
3rd party app developers use the open Fitbit API to work with their apps. Fitbit does not do any of this on their own. You would need to talk with the developers of whatever app it is that you want to integrate with your Fitbit account.
