For the last several days, I have had a notification on my phone stating the last time my Fitbit was synced. It is a constant notification that doesn't swipe away. My Fitbit died, so I dont know if this is related to that, or if it is part of the latest update that I installed hoping to restart my Fitbit. Turning off notifications isn't an option since it will turn off all Fitbit notifications, including ones that are part of challenges that I don't mind getting. So, what is going on with this notification that won't go away?

Thanks for bringing this to my attention, as well for the steps that you've tried prior posting. To further investigate, may I know your phone's model and Android version? Does this notification appear only on the Fitbit app or is it on your Fitbit device? Have you made sure the Fitbit app is updated to the 3.0 version? Also, please take a picture of the notification displayed, and attach it to your reply.

It was a notification on my phone itself, like a push notification. After making this post, I went back and looked at my phone's notification settings and found some new options there to turn off. I was able to turn off this notification, so the issue is resolved. 🙂
However, I'm not sure if this new setting option is from the updated app, or something that my phone just decided to do. Especially since it has only happened since I updated the app to try and revive my fitbit. (Whole other issue....my new Fitbit should arrive early next week.)

There are some options that were added to the Fitbit app with the new update, which includes Health Solutions and Research Programs. I'm glad that you got to fix it, as well that your new device will arrive soon.
