I've found when I've rearranged the Steps, KJ/Calories burned, Zone minutes and Floors meters at the top of the main screen by giving them a long press until the X appears in the top right, the backgrounds of all of the other measures (Heart Rate, KJ/Calorie intake, Water intake, weight stats, etc.) will often go black, so almost black text on a black background; a little hard to read. The only way I have found to fix this so far is to drag things around into new positions and eventually the background of those things will go back to white. Be patient and keep repeating. It seems very random and can take a good twenty or thirty moves.
Not sure if that's what you're talking about, but it's just another bug to add to the list that I've found lately.
I've just done it to myself again when making sure what I was saying above was correct. Normally dragging them around for a while into new positions will have them go back to a white background, but I'm giving up for now after a couple of hundred repeats.

Welcome to the Community, @anniesands79.
@Ftumch Thanks for all the troubleshooting steps performed. If the tiles under Today are showing a black background for both of you, I recommend you to force stop the Fitbit app by going to your phone's Settings > Apps > Fitbit > Force Stop. Then open the app again and the tiles should be on their normal background.
@anniesands79 If your Fitbit device is not recording heart rate, please try to do a restart as instructed on this help article.
Hope this helps.
