@phatbitzrhas the right information.
Tap on the exercise, e.g. walk, run, then tap on the gear icon on the right of your Pixel Watch 3's display. Turn off Start workout reminders and End workout reminders. I believe this should take care of the auto-recognize problem.

as you can see, I've tried the solution that is recommended in many forum posts, which is disabling auto exercise recognition in the companion app.
Do I need to reinstall the app or something?

Are you having problems with an exercise showing up on the fitbit app without you knowing you knowing that it was tracking that exercise? Or is the exercise starting automatically on your watch?
If it is the first, then disabling those features on the app, like on your screenshot, is what you should do.
If it is the second, where you see the activity running on your watch, then you have to disable it on the watch. That feature might be different on each watch, but basically you have to disable auto-start and auto-stop for that specific exercise, right before you Start the exercise.
